APRICOT DIPPING SAUCE

2 TBSP. CHOPPED
GARLIC
8 CUPS FRESH
TROPICAL APRICOT JUICE
8-1/2 CUPS
SUGAR
1 WHOLE FRESH
JALAPENO PEPPER, SLICED
2 TBSP. TIPAROS
FISH SAUCE
1 TBSP. SOY
2 TBSP. FRESH
BILIMBI JUICE
SLURRY
(cornstarch and water)
PROCEDURE: Heat
the saucepan, when hot, coat bottom of pan
with vegetable oil. Add garlic and sweat. Add tropical apricot juice, sugar, fish sauce, soy, bilimbi juice and cook for 10 minutes. Add jalapeno cook for 5 minutes. Add slurry until it coats the back of a spoon or until desired thickness.
