TROPICALAPRICOT DIPPING SAUCE

2 TBSP. CHOPPEDGARLIC

8 CUPS FRESHTROPICAL APRICOT JUICE

8-1/2 CUPSSUGAR

1 WHOLE FRESHJALAPENO PEPPER, SLICED

2 TBSP. TIPAROSFISH SAUCE

1 TBSP. SOY

2 TBSP. FRESHBILIMBI JUICE

SLURRY(cornstarch and water)

 

PROCEDURE: Heatthe saucepan, when hot, coat bottom of pan

with vegetableoil. Add garlic and sweat. Add tropical apricot juice, sugar, fish sauce, soy,bilimbi juice and cook for 10 minutes. Add jalapeno cook for 5 minutes. Addslurry until it coats the back of a spoon or until desired thickness.
