Remove seeds fromabout 5 pounds of Surinam cherry.

Process the pulpthrough a juicer to make 8 cups of puree.

 

Bring puree toboil while stirring.

Add 4 boxes ofpectin and bring to boil while stirring.

Add 8 cups of sugarand bring to boil while stirring.

With Surinamcherry you may want to add more sugar to taste.

 

Ladle intosterilized jars and seal.

Boil sealed jarsfor 20 minutes.

Loquat Jam

Peel and seedenough loquat to make 8 cups.

Keep peeled fruitin water to protect color.

 

Drain fruit andreserve water.

Mash firmly intomeasuring cup to make 8 cups.

Fill measuringcup with reserved loquat water.

Remainder ofwater can be used to make a refreshing juice.

 

Bring loquat toboil, stirring constantly.

Add 4 boxes ofpectin and bring to boil, stirring constantly.

Add 7 cups ofsugar and bring to boil, stirring constantly.

Taste and addmore sugar if necessary.

 

Ladle intosterilized jars and seal.

Boil sealed jarsfor 20 minutes.

TangerineMarmalade

Peel 25tangerines and slice peel into slivers.

Juice enoughtangerines to make 8 cups of juice and add peel to mixture.

When choosingtangerines about 20% of them should be slightly green as unripe fruit containsmore natural pectin.

 

Bring tangerinemix to boil, stirring constantly.

Add 4 boxes ofpectin and bring to boil, stirring constantly.

Add 8 cups ofsugar and bring to boil, stirring constantly.

Taste and addmore sugar if necessary.

 

Ladle intosterilized jars and seal.

Lime raisinmarmalade

Slice ripe limesinto very thin pieces.

Prepare enough tomake 8 cups.

 

Juice enoughlimes to fill@ the measuring cup.

Limes should bemostly yellow and ripe.@

 

Bring lime mix toboil, stirring constantly.

Add raisins totaste, about 1 large box.

Add 4 boxes ofpectin and bring to boil, stirring constantly.

Add 9 cups ofsugar and bring to boil, stirring constantly.

Taste and addmore sugar if necessary.

 

Ladle intosterilized jars and seal.

Boil sealed jarsfor 20 minutes.
