Ponzu

Yields 4.5 Cups

 

Ingredients:

1.5 Cups Mirin

1 Cup Rice Vinegar

.5 Cup Shoyu

1 Cup Bonito Flakes

3 Serrano Peppers –seeded/rough chop

.5 Cup Tropical Apricot

.25 Cup Bilimbi

.5 cup Fresh Rangpur LimeJuice

 

Procedure:

~1. Combine all ingredients(except Rangpur Lime Juice) in a saucepan and bring to a boil over medium heat

~2. Remove from heat, letcool, and strain through a china cap

~3. Add Rangpur Lime Juice totaste, cover and refrigerate
