Zest
Rangpur lime in larger pieces using a channel knife. Scrape the white
off@ the skin and fine Jullienne.
Place
in cold water and bring to a simmer. Drain and do it three times. Make a
simple syrup solution. Two cups sugar two cups water.
Place
zest in and bring to simmer.
Drain,
cool and place in pan with sugar.
Allow
to dry
