Filipino Dumpling Soup

Pancit Molo

Serving Size:10-12 Portions

                 

                  Quantity Ingredients

                  1/2lb.                    Ground pork

                  1/2cup                        cooked and shredded chicken breast

                  1                       egg, unbeaten

                  3tbl.                    Green Onions, chopped

                  1/2lb                    shrimp, peeled, deveined and                                                  chopped

                  3tbl.                    Garlic, minced

                  1/2cup                         onions, diced

                  1/4cup                        water chestnut, or jimica diced

                  1/2tsp                   Sesameoil

                  1tsp.                    salt

                  1tsp.                    pepper

                  1tbl.                    Soy Sauce

12                      dicedtree tomatoes

                  Wrappers

                  24                      wontonwrappers

                 

            Broth:

                  2tbl.                     Garlic, crushed

                  1/2cup                        onions, chopped

                  3tbl.                    Veggie oil

                  12cups broth including juice of 20 Bilimbi

                  4tbl.                     Fish sauce

                  1tsp.                    salt

                  1&1/2 tsp.               pepper

                  3tbl.                    Green onions, finely chopped

 

Procedure:

Instructions for filling:combine and mix well all the filling ingredients. Divide into 2 halves- onewill go in broth and the other half will fill the wrappers.

Place the filling in the middleof each wrapper. Fold over one corner til it meets the opposite corner. Sealthe edges with water. Cover with plastic until ready to add soup.

 

Instructions for broth: Sauté the garlic and onions in a large pot in the hot oil for 1 min. Add the remaining half of the filling mixture and cook for 5 min. or untillight brown. Add the chicken broth and fish sauce and bring to a boil.

Gently add the wraps to brothand stir.

Cover the pot and boil for 15min., stirring gently occasionally. Add the salt and pepper. Garnish with thegreen onions.
