Tropical Apricot Curry Sauce

Yield 6-8 Servings

Ingredients:

 

4 oz. tropical apricot Juice

1 can coconut milk

3 oz. sugar

4 oz. yellow curry paste

 

 

Procedure:

 

Combine sugar and apricot juice together in a sauce pot andbring to a simmer to dissolve sugar. Once sugar is dissolved stir in the can ofcoconut milk to sauce, when every thing is combined incorporate in your curry alittle at a time, be sure to try the sauce while adding in curry you may wantto add less or more depending on your taste. After all ingredients are combinedsauce is done remove from heat and keep warm. Serve with rice, and vegetables,mix in chicken, fish, shrimp or other seafood depending on what type of currydish you feel like.
