Tropical Apricot Curry Sauce

4 oz. tropical apricot Juice

1 can coconut milk

3 oz. sugar

4 oz. yellow curry paste





Combine sugar and apricot juice together in a sauce pot and bring to a simmer to dissolve sugar. Once sugar is dissolved stir in the can of coconut milk to sauce, when every thing is combined incorporate in your curry a little at a time, be sure to try the sauce while adding in curry you may want to add less or more depending on your taste. After all ingredients are combined sauce is done remove from heat and keep warm. Serve with rice, and vegetables, mix in chicken, fish, shrimp or other seafood depending on what type of curry dish you feel like.
