Tree Tomato Sauce

π cup shallots

π butter or less

2 oz ginger

1 cup white wine

12 ounce tree tomatoes

∏ teaspoon ground cinnamon

∏ teaspoon ground nutmeg

∏ cup white sugar

1 cup water

- First sweat the shallots with the butter

- Then reduce the ginger and white wine

- After reducing, add ground cinnamon, ground nutmeg, and tree tomatoes, add

more tree tomatoes if needed

- After five minutes add the sugar, then stir

- Then add water if needed
