Starfruit Banana Chutney

6 ripe bananas

3 starfruit

1/2 cup tamarind water

      (Tamarind paste mixed with water into an even consistency.)

1/3 cup Fresh Kona Lime Juice 

1 tblsp grated Kona lime zest

2 tblsp minced Hawaiian ginger root

1/2 habenero pepper

1 red bell pepper diced

1 green bell pepper diced

2/3 cup brown sugar

1 tsp ground coriander

salt and pepper to taste

 

Put all ingredients in pot, except bananas, bring to a boil and cook until tender.


Add bananas and cook for 30 seconds.

 

30 – 1 oz portions
