Kumquat Creme Brulee

12 egg yolks

4 oz sugar

12oz cream

1 tbsp kumquat zest

 

bring cream and zest to a boil and remove from heat

beat yolks abd sugar over a hot water bath until light and thick

strain the crem and fold into egg mixture

cool in an ice water bath

pipe or spoon into serving dish

cover the top with a light layer of sugar and melt with a torch
