Kumquat CremeBrulee




12 egg yolks

4 oz sugar

12oz cream

1 tbsp kumquatzest


bring cream andzest to a boil and remove from heat

beat yolks abdsugar over a hot water bath until light and thick

strain the cremand fold into egg mixture

cool in an icewater bath

pipe or spooninto serving dish

cover the topwith a light layer of sugar and melt with a torch
