Ingredients

 

3 Kona limesjuiced  

1 1/2 cuphigh-end tequila               

Handful mintleaves

24 oz of onosmall cubes

5 tomatillosvery small diced

4 tomatoskins very small diced

1/2 redonion very small diced

1 lg Mauionion very small diced    

2 jalapenosmall diced

 

Garnish:         

Chop mintleaves    

Chopcilantro leaves            

Lime wheel               

greens                                               

 

 

Heat tosimmer   lime and tequila -turn off

Add mint andcool in walk-in to let seep 1 hour.

Drain mintmix with ono and let sit for 1 hour.         

Drain liquidand mix with diced vegetables                                                                       

Divide intoportions, garnish and serve
