Tropical Apricot Dipping Sauce for Spring Rolls

1 cup Tropical Apricot pureed.
1 cup sugar
1 tsp ginger grated
1/2 cup sweet chili sauce (Mae Ploy brand)
1/2 cup Yamasa Shoyu
Put apricot puree in saucepan, reduce to half by boiling; add
sugar and grated ginger, simmer for 5 minutes, put through
chinois or fine strainer. Add the
sweet chili sauce and shoyu.
